Dr Atkins recommends that when we decrease our consumption of carbohydrates to a considerable amount, our body change from burning carbohydrates to burning fat as fuel. Carbohydrates that break down rapidly, are considered high in (GI ) Glycaemic Index and this are white bread, candy, and other sugary or processed foods and etc.

Carbohydrates that break down slowly, such as most fruit, vegetables, and grains, are considered low GI. Carbohydrate consumption is restricted to 20 grams per day, and must be obtained mostly from salad and other non-starchy vegetables. Bread, pasta, grains, starchy vegetables, or dairy products are all eliminated from the diet. However cheese, cream, and butter may be consumed.
